Ways to enjoy Greens
Here are a few pointers to guide your customers in using greens.
- You can choose from a variety of organically grown and non-GMO seeds to grow your greens. In so doing, you favour sustainable agriculture.
- Any greens can be used (sprouts are also a healthy addition): Sunflower, buckwheat lettuce, radish, arugula, cress, corn, pea, etc. greens are delicious and nutritious in sandwiches, tacos, quesadillas, wraps, tortillas, burritos, stir-fries and, or course, salads. When used in salads, long-stemmed greens are preferably chopped.

- Try a bowl of popcorn to which you have added your favourite greens and salad dressing; preferably, and strangely, eaten with chopsticks, one of my favourites.
- Radish greens added to a broth or a miso soup will look like rice noodles. An egg sandwich with radish greens becomes a gourmet dish.
- An omelet becomes a feast, when sunflower greens are added and lightly cooked. Discover its delicious Jerusalem artichoke-like taste. In the fall, find them in your garden. Look under the sunflowers you have grown, you will see young greens. Pick and try them.
- Decorate any dish with corn shoots. Using scissors make flakes; the white stems are very sweet and can be finely chopped.
- When cooking a stir-fry, add your favourite greens just before serving to keep them crunchy.
- Corn and sunflower greens are best kept with stem bases immersed in water to slow down oxidation.
